About This

  • Appearance: Tomatillos resemble small, green, purple or yellow tomatoes but are encased in a papery husk. When ripe, the fruit inside the husk turns from green to yellow or purple, depending on the variety, although they are most often used when green.
  • Culinary Use: They are a key ingredient in Mexican cuisine, particularly in salsa verde. Tomatillos provide a tart, slightly citrusy flavor that adds depth to sauces, soups, and stews. They can be eaten raw but are often cooked to mellow their acidity.
  • Nutritional Profile: Tomatillos are low in calories but rich in vitamins C and K, as well as antioxidants like quercetin and kaempferol. They also contain niacin, which is good for skin health.
  • Cultivation: Growing tomatillos is similar to growing tomatoes. They require full sun, well-drained soil, and support for their sprawling vines. Each plant typically needs another tomatillo plant nearby for proper pollination, as they are not self-pollinating.
